THE CHEF & OWNER: XAVI PALAU
Originating from Barcelona, Spain, Xavi has worked alongside renowned Spanish chefs at esteemed Michelin-starred establishments such as - Nandu Jubany. He has 11 years of experience in modern Spanish cuisine, his latest position being Executive Sous Chef for FOC Group, a Singapore based modern Spanish restaurant. At Cendra, his style of cooking infuses authentic Catalan Spanish cuisine with modern techniques.
