A La Llauna very often confused with Paella, is actually a traditional Catalan way of cooking, a method of baking food in a tin container. This dates back to medieval times where metal containers were used for cooking as Metal work was a prominent craft in Catalonia.
The roasting method concentrates flavors and results in a dish with rich, deep flavors due to the caramelization and integration of seasonings.
How is this different to Paella?
Paella is the hallmark of Valencia cuisine and cooking method involves a shallow, wide pan and involves sautéeing the dish before simmering. Paella has a distinctive taste due to the socarrat, the caramelized crust that forms at the bottom of the pan.
